Preheat oven to: 350 degrees Cook time: 50 minutes
Ingredients for cake:
2 cups sugar
1/2 tsp. salt
1 cup Veg. oil 2 cups grated carrots
1 tsp. baking soda 4 whole eggs
1 tsp. baking powder 2 cups all-purpose flour
1 tsp. ground cinnamon
Directions:
Mix together sugar, oil, and eggs. In another bowl, sift together flour, salt, baking soda, baking powder, and cinnamon. Add to first mixture and combine. Then add carrots and mix well. Pour into a greased and floured pan and bake at 350 degrees until done (25 minutes for sheet cake; 50 minutes for Bundt pan). Cool completely and frost.
Icing:
1 stick of softened butter
8 oz. softened cream cheese
1 pound of powdered sugar
2 tsp. vanilla extract
2 cups of finely chopped pecans (if desired)
Mix all ingredients together. Frost cake.
